these potato thins taste like bite-sized baked potatoes.  they're a great pre-dinner appetizer or party snack food.  i dare you not to fall in love with them!
> Ingredients:
2 to 3 potatoes, sliced
olive oil
chedder cheese, shredded
sour cream
salt and pepper, to taste

> Directions:
- Pre-heat oven to 350 degrees F.
- Lightly coat muffin or cupcake pan with olive oil.
- Lightly coat each potato slice.  Place a potato slice in a muffin pan, add a little shredded cheese on top, place another potato slice on top, then more chedder cheese, and finally a third potato slice with more cheese on top of that.  (Three layers of potatoes in each muffin pan spot.)
- Bake for 45 minutes.
- Let cool and then remove potato thins from muffin pan.
- Top each potato thin with sour cream, chives, salt and pepper.

This cream cheese filling also tastes AMAZING on the potato thins and makes a great substitute to the sour cream.
