buttermilk pie

2/18/2012

I usually don't brag about my baking, but this buttermilk pie recipe is a smash EVERY time.  If I ever need to bring a simple, fast, mouth-watering dish to a potluck; it's this one.  I suggest you go ahead and make one right now so you'll believe me.  Oh, and it's GREAT with a cup of coffee in the morning.
> Ingredients:
1 stick butter, softened
2 cups sugar
3 eggs, beaten
1 cup buttermilk
3 tbs flour
1 tsp vanilla
dash of nutmeg
9" pie shell (I use Pillsbury, but I will try to make my own pie crust one day!)

> Directions:
- Preheat oven to 350 degrees.
- Cream the butter and sugar in a large bowl.
- Stir in the eggs, buttermilk, flour, vanilla, and nutmeg.
- Bake for 50 to 60 minutes.
- Let the pie cool, then place in the fridge overnight.

I tend to make these pies two at a time (since I buy the buttermilk in 2 cup jugs anyways) and they're usually gone within a week.  Don't say I didn't warn you of it's addictiveness!
