zucchini cakes


need an extremely simple appetizer that will be a hit?  look no further!  this zucchini cake recipe is amazing.  in fact, you should just go ahead and make a double batch!
> Ingredients:
1 large zucchini, grated
1/2 cup Parmesan cheese, grated
1 cup panko bread crumbs
dash of ground nutmeg
1/4 tsp paprika
1 clove garlic, minced
1 egg
salt and pepper to taste
olive oil for frying

> Directions:
- Combine all ingredients (except olive oil of course) in a bowl and mix thoroughly.
- Form the mixture into patties; I just used my hands.  (Makes about 7 to 8 patties.)
- Heat olive oil over medium heat in a pan or pot.
- Once heated, add patties and cook until golden brown (about 4 minutes on each side).

I ate the patties as is.  But I've heard they are great with a bit of ranch dressing.  Next time, I'm going to add a bit of Tabasco sauce too!
