i suppose bell peppers can be stuffed with a lot of different things. this recipe calls for couscous. next time, i'll definitely add more cheese!
> Ingredients:
4 bell peppers, hollowed out
olive oil, for sauteing
couscous with corn and spices (recipe found here)
bushel of cilantro, chopped
2 green onions, chopped
2 small red onions, chopped and sauteed
chedder cheese
1/2 lime, squeezed
> Directions:
- Hollow out the bell peppers, cut off the tops, and arrange in pyrex dish. Add a bit of olive oil in and around the bell peppers and cover the bowl with aluminum foil. Place in the oven at 450 degrees for 35 minutes.
- Prepare the couscous as shown in this recipe here.
- Saute the red onions in a skillet with a dash of black pepper and sugar.
- Remove bell peppers from oven.
- Stuff the bell peppers with a layer of couscous, red onions, cilantro, more couscous, and cheese. Place the bell pepper tops back on. Sprinkle the green onions and cilantro around the bell peppers in the bowl.
- Place back in the oven at 450 degrees for 20 minutes.
- Remove from oven, squeeze lime over the bell peppers and serve!
