seaweed salad


i had my first bite of seaweed salad while on vacation in hawai'i and have been wanting to eat it again ever since!  i finally had the courage to try to replicate the dish, and here it is!  i think it came out spot on!
3/4 oz dried wakame seaweed (whole or cut)
3 tbs rice vinegar
2 tbs Asian sesame seed oil
3 tbs soy sauce
1 tsp sugar
1 tbs sesame seeds, toasted
1 tsp ginger, peeled and finely grated
1 - 2 tbs thai chili peppers, chopped (optional)
1 tsp garlic, minced

- Soak seaweed in warm water for 5 minutes.  Drain and squeeze out excess water.  If wakame is uncut, then cut into 1/2 inch wide strips.
- Mix together the rice vinegar, sesame seed oil, soy sauce, sugar, sesame seeds, ginger, thai chili peppers, and garlic.  Stir the mixture into the wakame.
- Chill seaweed salad in fridge prior to serving.

Voila! Seaweed salad is ready! It's a great side dish to your seafood dinner!  The possibilities are endless with what you can incorporate into your seaweed salad.  What do you like to add?
