Plum Tartelettes


Single serving plum tartelette desserts: yummmm!  I have never baked plums before, and I found that they taste a lot like peaches once they are done.  Since I love peaches too, it turned out swell!  I guess you'll have to try making it and see what you think: do the plums taste like plums or peaches?
*For the pie crusts:
I used this recipe for an oil-based pie crust.

*For the filling:
2 to 3 plums, pitted and sliced (skin removed, optional)
1 tbs sugar
juice of 1/2 of a medium sized lemon
zest of 1/2 of a medium sized lemon
1 tsp cornstarch

*For the pie crusts:
Oil-based pie crusts recipe.

*For the filling:
- Mix plums, sugar, lemon juice, lemon zest, and cornstarch in a bowl.

- Lower oven heat to 350 degrees F.
- Spoon filling into each pie crust cup.
- Use cookie cutters on spare dough to create designs (I made little stars) and place on top of the filling.
- Bake for 35 to 50 minutes (until lightly brown).
- Let tartelettes cool down for 10 to 15 minutes then pop them out of the cupcake pan.

(NOTE: if you eat them when they come right out of the oven, they sort of fall apart and turn into a cobbler.  Even though they arn't as pretty as cobblers, they sure are delicious!)
