in my experimentation with a baked oatmeal dish, i've come up with a delicious dessert baked oatmeal breakfast!  its sweet and savory and goes great with a steaming cup of coffee (or a dollop of ice cream!).
Ingredients:
2 cups old fashioned oats
1/3 cup brown sugar
1 tsp baking powder
1 tbs orange zest
1 tsp cinnamon
2 cups milk
1 egg
3 tbs butter, melted
2 tsp vanilla
1/2 cup raisons
1/3 cup mini marshmallows, halved
nutella, softened
dash of hazelnut coffee (optional)

Directions:
- Preheat oven to 375 degrees F.  Spray inside of 8x8 baking dish with cooking spray.
- In a large bowl, mix together the oats, sugar, baking powder, orange zest, cinnamon, half the raisons and the hazelnut coffee.
- In another bowl, whisk together the milk, egg, vanilla, and butter.
- Empty the oatmeal mixture into the baking dish.
- Arrange the remaining raisons and mini marshmallows on top.
- Pour the milk mixture over the oatmeal mixture.  Gently shake the baking dish so that the milk mixture evenly distributes throughout the oatmeal mixture.
- Bake 35 to 40 minutes or until top is golden brown.  (In the last 5 minutes, drizzle nutella over the top of the baked oatmeal!)

I find that this dish tasted great served warm or cold.  If you don't want the dish to be as sweet, you can substitute the marshmallows with a fruit (such as strawberries or blueberries) and you can substitute the nutella with honey.  You can add nuts (such as almonds or walnuts) or even chocolate chips!  The possibilities are endless!
