couscous is marvelous.  it can be prepared and ready to eat in 10 minutes, it's a great side dish or a meal in itself, and you can add just about anything to it!  today's recipe is couscous with corn and various spices.

(this was made to be stuffed into bell peppers (recipe coming soon!).  but i made lots of extra couscous for leftovers.  you know me, always thinking ahead.)
> Ingredients:
3 cups water, boiled
1/2 - 1 tbs chicken stock
1 tbs onion powder
1 tbs garlic powder
1/2 tsp curry powder
1 tsp sesame seed oil
1/2 tsp ground sage
1/2 tsp garam masala
1/2 tsp ground cumin
1/2 tsp basil
1/2 tsp ground red pepper
2 cups couscous
1/2 cup corn

> Directions:
- bring water to boil in a pot
- add all of the spices to the water
- add the corn and give it all a good mix
- REMOVE pot from heat
- add couscous (off the heat), place the lid on the pot, and let set for 5 minutes
- once the 5 minutes are done, take off the lid and fluff the couscous with fork

(If you would like a smaller couscous portion, the ratio i've found to always work is 1 cup of couscous to 1.5 cups of water)

that's it! in less than 10 minutes, you have an exotic meal!  you can add just about anything to couscous.  i will be adding more couscous recipes soon!
what do you like to add to your couscous?
