coconut coated cod.  need I say more?  add a squirt of lime to REALLY bring out the flavor.
> Ingredients:
cod fillet/s
flour
egg
panko bread crumbs
coconut flakes
grated romano cheese blend (optional)
lime, sliced
vegetable oil, for frying

> Directions:
- place 1 cup of flour in a bowl
- whisk 1 egg and 1/2 cup of water in a second bowl
- mix 1 cup panko bread crumbs, 1 cup coconut flakes, and 1/2 cup grated romano cheese blend in a third bowl
(add more to each bowl as needed, it all depends on the size and quantity of cod fillets you are preparing)
- prepare pan for frying (add vegetable oil and turn heat to medium)
- for each cod fillet, coat first in flour in bowl one, then move to second bowl and soak in egg mixture, next move to third bowl and thoroughly coat in the coconut mixture, and finally place in frying pan.
- fry cod fillets for 1 to 2 minutes per side on medium heat (depending on the size of the fillet)
- squeeze a slice of lime on your cod before eating

This recipe works every time! What do you like to add to your breading mixture?  I think this coconut breaded cod recipe would taste amazing in a fish taco!
