this is one of our go-to meals when we're short on prep time but want an impressive spread.  just chop up the bok choy, cabbage, and mushrooms; season; and throw on a baking sheet.  after 12 minutes of baking, you're all set!
> Ingredients:
4 baby bok choy, halved
6 mushrooms, sliced
1/2 head green cabbage, shredded
1 1" piece of ginger, peeled and finely grated
2 tbs garlic, minced
3 green onions, chopped (optional)
2 to 3 tbs canola oil
salt and pepper, to taste
(To accompany: 3 or 4 skinless salmon fillets)

> Directions:
- Place the bok choy, mushrooms, green cabbage, and green onions in large mixing bowl.  Drizzle with oil.  Add ginger, garlic, salt and pepper.  Toss to coat.
- Scatter vegetables across baking sheet.
(If you're making the salmon as well: season each fillet with salt, pepper, garlic powder and onion powder; arrange salmon on one side of the baking sheet along with the vegetables.)
- Bake for 12 to 15 minutes at 450 degree F.  (Stir vegetables occasionally)

This meal has become one of my favorites.  It scores points with me for the ease of prep work and the short baking time.  Produces a great meal for four within 30 minutes!
