Mjadara: a  middle eastern dish that has rice, lentils, and carmelized onions.  As with most arabic dishes, a suggested serving option is to pair it with a spoonful or two of plain yogurt.  Also, tabbouli goes great as a side dish!
Ingredients:
1 cup lentils
2.5 cups water
2 large onions, chopped
2 tbs garlic, minced
1 cup jasmine rice
2 cups water
1/2 tsp salt
1/4 to 1/2 tsp pepper
1 tsp cumin
olive oil, for sauteing
dash of sugar, for sauteing
plain yogurt (optional)

Directions:
- Bring lentils and 2.5 cups water to boil in a pot.  Then let simmer (on medium to low heat) and put a lid on the pot for 20 to 25 minutes (until lentils are soft).  Drain.
- Saute onions in olive oil and sugar on medium heat (40 to 50 minutes).  Add garlic in the last 5 to 10 minutes of sauteing.
- Put 2 cups of water and the spices in a pot and bring to boil.  Once it starts to boil, add jasmine rice, give it a quick stir, put the lid on, and let it set on low heat for 30 minutes (do NOT open the lid for the full 30 minutes!).  Once the 30 minutes is over, take the pot off the heat (with the lid still on!), and let it set for 5 more minutes.  Finally, stir with a fork.
- Mix the lentils with the rice.  You can either mix the onions in with the lentils and rice or you can top onions on each individual's plate.
- Add a side of yogurt to each plate and you're ready to eat!
